Peru! Following the Inka Trail to Deliciousness

When I think of Peru, the first thing that comes to mind is one of the seven wonders of the world...Machu Picchu. One of my goals in life is to see all seven and now I can check this one off my list! Seeing this incredible village nestled in the mountains at 8000 feet was, to say the least, jaw dropping. What was surprisng was how wonderful and friendly the people were and how coloful this country was. Vibrant color surrounded me at every turn, from the gorgeous Spanish Colonial architecture, to the street vendors with their Alpaca fabrics and various mulitcolered trinkets.


Peru is also know for it's delicious,flavorful food and the well known alcoholic beverage, a pisco sour. I tried plenty of both and will share some of my favorites with you,
Peruvian Chicken with Cilantro Sauce, is one of the most well known dishes from Peru. It's so delicious with its spicy marinade for the chicken and the herbacious and tangy green sauce, that you can dip or just pour generously over the top! It's also one of easiest things in the world to make! Just whisk together the simple mariniade and pour it over chicken wings, thighs or breasts and let sit for an hour or two or even overnight. Then while the chicken is resting in it's flavorful bath, blend together the few ingredients for the Cilantro Sauce. Finally just put those yummy peices of chicken on a rack in a roasting pan and cook for 45 minutes. Done! I love the chicken wings the best, because I get the most bang from the Cilantro Sauce with each bite. Oh boy...

Lectin Free Peruvian Chicken Wings
Yield: 4 appetizer servings Prep time: 10 minutes Total time: 55 minutes
INGREDIENTS Olive Oil | 3 tablespoons Minced Garlic | 6 cloves Ground Cumin | 1 tablespoon Kosher Salt | 1 teaspoon Smoked Paprika | 2 teaspoons Dried Oregano | 1 teaspoon Ground Pepper | 1 teaspoon Lime Juice | 1 lime Organic Pastured Chicken Wings | 2 pounds
DIRECTIONS
In a glass measuring cup, combine all ingredients, except wings, and stir together. Place chicken wings in a plastic zip bag and pour marinade over, then seal the bag. Squeeze the bag and move the marinade over the wings to completely coat them. Put the wings in the refrigerator for at least one hour up to overnight. Preheat the oven the 45o degrees F. Oil an oven rack to prevent sticking and place over a rimmed baking sheet. Place the wings on the rack and cook until brown, about 45 minutes. Serve with Creamy Cilantro Sauce for dipping.
