Who are these evil Lectins and what are they doing to me?

What are lectins?
I did a little research after some good friends started eating lectin-free and had some incredible results... I was intrigued! These friends lost weight, felt great, controlled diabeties and "cured" themselves of several nagging ailments. After having my gallbladder removed several years ago, I have had my own gut issues and wondered if this Lectin Free way of eating would help me resolve some of those issues.
What I found out was that certain foods contain proteins called Lectins, which are quite toxic to humans. The proteins are produced by plants as a way of defending themselves from animals (and Humans), thus allowing them to survive and propagate. It seems that if we stay away from these lectin rich foods, we can rid ourselves of many health issuses.

Nightshades
Seeds
Beans and Legumes
Traditional Dairy Products
Grain-fed and farm raised animal proteins
